Cutesy Cupcake Cookies {GF, Dairy Free, Nut Free}

 It’s pretty obvious I have already failed at my first New Years Resolution… *ahem* I should have posted last week… But that’s ok.  Because… I have been oh so busy doing stuff.  {insert sarcasm}

And because I’ve been swamped with busy-ness (like a gazillion loads of laundry with my new fancy washing machine!) I’ve decided to share these gluten free, dairy free, nut free sugar cookies with you.

I made these cookies for my awesomesauce neighbor to bring in to her students.  And since 99% of kids have allergies these days, she asked that they be free of those three allergens.  

The verdict?  Totally kid approved.  Easy to roll out and shape with a cookie cutter.  And cute.  Super cute.

A Housewarming Party… for Us!

A few weeks ago we hosted a Housewarming Party at our new home!  We invited Beau’s Coastie co-workers and friends, our neighbors, and my hometown friend Liz!  We had such a wonderful time and I {finally} made a few new friends!

This “Home Sweet Home” bunting was so much fun to make and it made quite a statement!  I love the summery warm colors.  I have two more exact buntings for sale in my Etsy Shop.  You can find it HERE if you’re interested  🙂

No party is ever complete without desserts!

Mini Peanut Butter Cookie “Smores” Cups… melted mini marshmallows and chocolate buttercream add extra yumminess to the flourless peanut butter cookie base.

Rainbow Rice Krispie Treats.

Cake Pops… which were devoured!  I think I know now of a few Coasties who would be excellent spokespeople for my pops – like the two that ate about 5 each… yeah, I saw you sneaking back to take more!

For the savory dishes, I made Baked Chicken Sausage Penne, Bean Dip, my Mom’s awesome Spinach Artichoke Dip, veggies and hummus, and these delish Vegan Cabbage Tacos.

And homemade Almond Thyme Crackers with Sea Salt.

It was such a lovely party and Beau and I cannot wait to host another one!

Chocolate Chip Cookie Dough Dip {refined sugar free}

  In the middle of May Beau and I flew back to my hometown in Connecticut and visited my parents and attended a friend’s gorgeous wedding.  

  And thanks to Katie over at “Chocolate Covered Katie” I was able to make my parents this deeelicious chocolate chip cookie dough dip.  I tweaked Katie’s recipe for (No Sugar) Cookie Dough Dip to ensure that it was as sugar free as possible.

  Now that’s what I call eye candy.

  I followed Katie’s recipe, but changed a few ingredients: I used 2 packets of stevia and about 1/8 cup agave for my sweetener (instead of dates), 3 tablespoons of flax meal, and chopped up some 75% Chocolate Lindt squares in place of chocolate chips.  (These squares actually have more protein and fiber, but less sugar so the carb ratio is really good for those who need to moderate their sugar levels).

  Mom and Dad, who often don’t get to enjoy sweets, loved it!  🙂

  Alfie, their new doggie they got at The Hotel for Dogs and Cats where I used to volunteer back in Florida.  (See my other post related to the hotel).   Alfie is such a sweetheart.  He is officially their third child.  He goes everywhere with them hehe.
  We went hiking in Bigelow Hollow and Alfie had a blast!  Not to mention I forgot how beautiful New England is in late spring…

Valentine’s Cookie Pie

Warm, chocolately cookie pie.  And it’s healthy?

Um, yes please!
I recently discovered a blog called Chocolate Covered Katie which is amazing!  She makes the most scrumptious desserts using healthy ingredients such as stevia, nuts, and chick peas.  Seriously, you have to check it out.  Low sugar, low fat, and added nutrition means I can have more dessert.  Right?  Right!
Anyways, this cookie pie here is a version of the Tollhouse Cookie Pie, but a lot healthier and flour free (yippee!)  I pretty much followed her recipe to a T except I don’t have a food processor so I used my electric hand mixer.  It was the perfect Valentine’s treat to surprise my hubby with after his long day of flying.

this was my version…

     2 cans garbanzo beans (drained)
     1 cup sugar (or brown sugar)
     3 TB vegetable oil
     1 egg
     1 cup quick oats
     1/2 tsp baking soda
     2 tsp baking powder
     2 tsp vanilla
     1/2 tsp salt
     1 cup semi-sweet chocolate chips

1)   Preheat oven to 350 F.
2)   Blend all ingredients except for chocolate chips as smooth as possible (this is where a food processor would come in handy!)
3)   Stir in chocolate chips then press mixture into greased 10 inch spring-form pan.
4)   Bake for about 40 minutes!
So simple and so yummy.  And doesn’t taste beany at all.  I pinky promise you because I hate bean flours and beany baked goods!

FYI:  I just bought six more cans of garbanzo beans today in anticipation of making more cookie pies hehe  🙂
I also wanted to share what my sweet hubby did for Valentine’s Day.  First off he surprised me with roses.  


Have I told you about the last time he gave me flowers?!  

Well, I can’t quite remember when… ha ha.

Well anyways, he and two other flight hubbys teamed up and sent us wives on a scavenger hunt.  At each location we had to walk in with a rose and get our cute little goodie bags waiting for us.  Each bag had sweet love cards from our guys! We had such a wonderful girl time together talking about where we’re moving, family life, and of course how sweet our guys are!  Love my friends!  And our wonderful hubbys!

The Much Anticipated Craft Fair Pictures!

Most popular award goes to my sugar cookies which I decorated with royal icing.  My first time ever doing it and I think they turned out great!  Can’t wait to do them again!  Only downfall… they were my only non-gfree item I made.  Oh well…

Red velvet cake with nutella filling covered by marshmallow fondant and gum paste bow.  I made this the day of and brought it to the fair as a display… and on Saturday we served it as Beau’s belated birthday cake with friends!
