Cutesy Cupcake Cookies {GF, Dairy Free, Nut Free}

 It’s pretty obvious I have already failed at my first New Years Resolution… *ahem* I should have posted last week… But that’s ok.  Because… I have been oh so busy doing stuff.  {insert sarcasm}

And because I’ve been swamped with busy-ness (like a gazillion loads of laundry with my new fancy washing machine!) I’ve decided to share these gluten free, dairy free, nut free sugar cookies with you.

I made these cookies for my awesomesauce neighbor to bring in to her students.  And since 99% of kids have allergies these days, she asked that they be free of those three allergens.

The verdict?  Totally kid approved.  Easy to roll out and shape with a cookie cutter.  And cute.  Super cute.

Want to try the recipe?  I followed Adventures of a Gluten Free Mom’s Sugar Cookie Recipe and simply made royal icing to decorate!  Easy Peesy.  And yummy wummy.

Triple Lemon Cake

  Two weekends ago we had our first guest over for dinner at our new home.  I roasted huge artichokes in the oven, baked focaccia bread that would make Italians proud, and served a version of my Penne Primavera.
But of course, a dinner party is never complete without dessert.  I baked a Triple Lemon Cake complete with fresh lemon buttercream and homemade lemon curd.  To die for.
  I used Annalise Roberts’ recipe which she calls “Lemon Layer Cake.”  The lemon flavored cake alone was so light and delicate… this cake is going to become a regular in my baking repertoire.
  I also made some simple yellow Apple Blossoms out of royal icing.  I think they add a simple yet elegant touch!
  I’ll gladly make this for whomever visits us first out in California!

Royal Icing Flowers

   So remember that cake I made for my Wilton class… the one with the flowers and basketweave?  Well, here are some solo pics of the flowers I made throughout that class.  They are all made from royal icing.

daffodils and primroses

roses, violets, pansies, northern primrose

rose buds and apple blossoms

white lilies with yellow centers

i think this one is so cute!

Wilton Advanced Flowers Final Cake!!!

Here is the finished product of my Advanced Flowers Wilton Cake Decorating class!

All flowers were hand made using royal icing.

I made the basket-weave with home made buttercream frosting.
It is a two layer gluten free coconut cake with a coconut meringue frosting in the middle.
In love with my finished product!
